WHAT ARE MICROGREENS?

Often confused with sprouts and shoots, microgreens are young, immature vegetable greens. A true superfood, every seed boasts four to 40 (sometimes 50!) percent more nutrient density than its adult counterpart.

Among the healthiest foods on the planet, microgreens are rich in those oh-so-important minerals like iron, calcium, magnesium, potassium and phosphorus. Also packing a punch with vitamins A, B, C, E and K, the icing on the cake is microgreens are high in fiber and low in calories.

WHY EAT MICROGREENS?

Packed full of vitamins, enzymes and flavor, microgreens make every dish a whole lot better (and tastier). Here are a few of our favorite reasons to eat microgreens:

  1. We’ve already mentioned the taste factor, but did we mention how yummy they are?
  2. Microgreens boost immunity, help improve eyesight, reduce risk of heart disease and some studies show microgreens may even help fight cancer.
  3. As if that wasn’t enough, microgreens also ward off digestive issues, help lower cholesterol and reduce constipation.
  4. So tiny, most people won’t even notice them on top of their meal (or ground and mixed into oatmeal, casseroles, pasta, tuna salad—you see where we’re going here).
  5. Microgreens grow fast and are generally ready to harvest within seven to 10 days as opposed to their adult counterparts, which can take up to 10 weeks.
